Emily Jackson works for Appalachian Sustainable Agriculture Project (ASAP), in Asheville, NC. She launched their Growing Minds Farm-to-School program and offers support to teachers, farmers, and child nutrition directors, locally and regionally, to implement farm to school initiatives. Through her experiences with ASAP and the national Farm to school Network, Emily illustrates how farm to school programming can play an important role in addressing food system change and food security in the western region of North Carolina and beyond.
